Biscuit
130g plainflour
1 teaspoon baking powder
½ teaspoon salt
4 free-range organic eggs, room temp.
150g caster sugar
2 tablespoons oil + 2 tablespoons buttermilk
1 teaspoon vinegar + 1 teaspoon vanilla extract
Extra: icing sugar and a clean tea towel
Filling: apricot jam + peaches, jar or tin +
250g mascarpone + 250g double cream + 100g sugar
Glaze: 100g icing sugar + 2 tablespoons peach syrup
+ orange food colouring

For King's Day we are baking an orange roulade this year. We have made it before so it will be fine and anyway, the mini-monsters are on the job too.. The rolling up is always a bit tricky, but take your time and roll it gently. If you succeed, your cake will not only look beautiful, but it will also be delicious! The recipe comes from Francesca Cooks, only she uses apricots and a lot more glaze.

How to make an Orange roulade
Spread a dishcloth on your work surface, sprinkle it thinly with icing sugar

Preheat the oven to 180°C / 160°C Fan

Place baking paper on a baking tray, place the mold on it.

Stir flour, baking powder and salt together.

Beat the eggs on high speed frothy, in 5 minutes.

Add the sugar slowly, while stirring.

Add the oil, buttermilk, vinegar and the vanilla extract and beat it all for another minute, until combined

Gradually add the flour.

Fold it in until it is fully incorporated.

Spoon the batter into the baking tin.

Bake the cake 12-15 minutes, until golden brown, then remove it from the oven and flip it immediately onto the tea towel

Peel the baking paper from the cake.

Roll the cake in the dishcloth.

Drain the peaches.

Pour the cream in the mixer.

Cut the thoroughly drained peaches into thin slices

Beat the cream with the mascarpone and the sugar until stiff.

Roll out the cake and spread a thin layer of apricot jam over it.

Spread the mascarpone / cream mixture over the cake.

Save some of the mascarpone / cream mixture!

Place the peach slices on top.

Roll up the cake gently again.

Spread a thin layer of cream on the roll.

Stir the glaze.

Drizzle stripes of orange glaze over the rolled up cake.

Decorate the orange roulade with peach slices.
