Shopping list
For the salad
500g various colours tomatoes (whole or halved)
1 Charentais melon, cut about the same size as the tomatoes
12 slices of prosciutto, rolled up
handful of mint, leaves picked, shredded
For the dressing
1½ tablespoons red wine vinegar
3 tablespoons olive oil
1 teaspoon honey
Serve the salad with crusty fresh bread
For Easter we are making a quick, easy and very tasty salad and - for a change - there are no eggs involved! The little monsters are coming to help in the kitchen, to do mainly the stirring and tasting :)) We bake bread as stated on the packaging, then it is nice and fresh when the salad is ready. What a nice recipe!
How to make the Melon, Tomato and Prosciutto Easter salad
Peel and cut the melon.
Halve the tomatoes.
Roll up the ham and cut it.
Stir the dressing until combined.
Toss fruit and veg into the dressing.
Transfer the salad to a serving platter.
Divide the prosciutto over the salad.
Slice the freshly baked bread.
Sprinkle the mint leaves over the Easter salad.
