125g self-raising flour
2 tablespoons icing sugar
1 free-range organic egg (M), beaten
2 ripe bananas
125 ml lukewarm, full-fat milk
butter, to bake in
icing sugar, for sprinkling
maple syrup
Today is Candlemas and traditionally we eat pancakes, but this year not tonight! On Sundays we get up a bit later than on week days and then we have a cozy pajamas breakfast, with an extra tasty treat.
On this cold February day we bake little pancake towers with banana. A favorite breakfast of the little monsters, (but everyone loves these towers, they're delicious!). And then we are still eating pancakes today!
How to make the pancake towers
Put the self raising flour and the icing sugar together in a bowl.
Stir it together for a moment.
Beat the egg until loose.
Add the egg to the flour mixture and fold it in.
Crush 1 of the bananas using a fork.
Heat the milk to lukewarm.
Add the milk and banana to the mixture.
How to bake the little pancakes
Stir it all together using a wooden spoon.
Mix it until smooth with a hand blender.
Heat the pan and melt a knob of butter.
Spoon 3 circles of batter in the pan.
Flip the pancakes when you see bubbles.
Bake the other side golden brown too.
Stack the pancakes in the warm oven.
Place banana slices between 3 pancakes.
Pour maple syrup over the top of the pancake towers.
For who prefers icing sugar, of course that's also possible!
