This weekend we have a little Unicorn party. We eat Unicorn Poo and we drink a lovely glass of Unicorn hot chocolate with it, if this isn't going to be a sweet weekend what is?

The unicorn poo is really fun to make with the kids. The meringue needs to dry in the oven for a long time. Meanwhile the kids can cut cute fondant faces. When the meringue has cooled completely the kids can paint the poo in pastel colors, pretty as a rainbow!

How to make Unicorn Poo

Trace circles on waxed paper, put the paper upside down on a baking tray.

Separate the 5 eggs in a bowl so you can quickly spot and remove any egg-shell bits.

Beat the egg whites with lemon juice, add the sugar in slowly.

Whisk the sugar in well before you add a little more.

Repeat it adding the icing sugar, in the same way.

The egg white mixture should be stiff and look shiny.

Preheat the oven to 120°C

Pipe meringe heaps on the waxed paper on the baking tray.

Bake for 20 minutes on 120°C, turn to 100°C then bake 1 hour.

Allow the meringue to cool completely in the oven.

Meanwhile cut small eyes and mouths from icing fondant.

Stir a drop of food colouring into some drops of water.

Colour the meringues but use a minimum of water.

Now stick the cute faces on the Unicorn Poo.

Ready! Let's get the party going!
