90g plain flour
65g soft butter
45g of icing sugar
25g of cocoa
1 small free-range egg yolk
5 ml of semi-skimmed milk
5 ml vanilla essence
50g of chocolate
chocolate sprinkles
coloured sprinkles & confetti
In Autumn we bake funny hedgehog cookies as a treat. Soft sweet chocolate cookies to present at school for a September/October Birthday boy or girl. The little ones love these cookies but big kids do too! ;) Make the hedgehogs together with the kids, even the little ones can be a big help!
How to make Hedgehogs
Whisk the butter with the icing sugar creamy with a mixer.
Add the egg yolk, vanilla extract and the milk to it.
Stir all ingredients together until it is a cohesive mixture.
Sieve the flour and the salt into the mixture.
Weigh the right amount of cocoa and add it to the mixture.
Whisk all with a mixer into a granular cookie dough.
Knead the dough until it feels smooth and supple and it looks shiny.
Roll the dough into a ball and wrap it in cling film.
Place the dough in the fridge and let it rest for 15 minutes.
Kneed the dough quickly and roll it into balls.
Roll one end of the balls into a pointy shape.
Preheat the oven to 180°C
Bake the cookies for 12-15 minutes in the middle of the oven.
Melt the chocolate au bain marie (place a bowl on a small pot with hot water).
Drip melted chocolate on the back end of the cookies.
Scatter chocolate sprinkles onto the wet chocolate.
Use sprinkles and confetti to make the eyes and noses.
Prick holes for the eyes and push sprinkles in the holes.
Use the stick to tip chocolate on to glue the noses on.
Now the hedgehogs are ready. You can place them all together on a big plate with (fake) Fall leafs or have some with a cup of tea. Have fun on your Birthday!
