Egg and Tater Bake

Shopping list
1 pack of tater tots
2 tablespoons olive oil
1 medium onion
sea salt & freshly ground black pepper
1 bell pepper
150 grams of mushrooms
a clove of garlic
3 Roma tomatoes
a handful of spinach
4 free-range organic eggs
50 grams coarsely grated Cheddar cheese

A tasty vegetable dish with potatoes and eggs is quickly made. We choose mini potatoes for this, they are most similar to the American Tater Tots from our recipe ;)) A day without meat is really not difficult at all with such a delicious dish!

How to make a Tater Tots Bake

Preheat the oven to 200°C

Spread the potatoes on a baking tray lined with paper.

Bake the tots for 20 minutes.

Wash and drain the vegetables well.

Brush the mushrooms until clean.

Cut the vegetables.

Put the garlic into the press.

Fry the onions until soft.

Add the peppers and fry too.

Add the mushrooms and garlic.

Stir in tomatoes and spinach.

Fold the tater tots into the mixture.

Bake it all together for a few minutes

Make 4 well in the frying pan.

Carefully break the eggs into the wells.

Sprinkle cheese on top of your dish.

Bake the eggs for 15 to 18 minutes, for slightly runny yolks

Season the dish with sea salt and freshly ground black pepper.

Serve the egg and tater tots bake immediately, hot from the pan!
