130g all-purpose flour
2 -3 apples
2 teaspoons baking powder
2 tablespoons granulated sugar
½ teaspoon cinnamon
2 free range organic eggs, room temperature
½ teaspoon salt
60 ml whole milk
2 teaspoons fresh lemon juice
1 – 3 liter vegetable oil, (for frying)
150g icing sugar, sifted
3-6 teaspoons water
few drops lemon juice
A side step from the Dutch oliebol / apple beignet is the British Apple Fritter. The batter is a lot like oliebollen batter, but the fritter is filled with apple cubes and there is also cinnamon involved. It sound really good and today we're going to try them out, to taste if they really are that good ;))
How to make Apple Fritters
In a bowl stir flour, baking powder, cinnamon and salt together.
Peel the apples, remove the cores and cut into cubes.
Squeeze the lemon, toss the cubes with a little juice.
Set both bowls aside for the moment and make the batter
Put eggs and sugar into a bowl.
Mix until well combined.
Mix in half the flour.
Mix in the other half.
Add the milk and whisk.
Beat until you have an airy batter.
Spoon the apple into the batter.
Heat the sunflower oil to 190°C
Scoop a small ball of batter into the oil.
Fry the fritters golden brown on both sides.
*Stick in a small knife to check doneness.
Stir a glaze of icing sugar, water and lemon drops.
*TIP! Prick a small knife in the center of the fritters to check if they are dry in the center, if not fry them a bit longer
On request: half with icing sugar, half with icing. :))
