400g strawberries
50g icing sugar
juice of ½ lemon
500g fresh vanilla custard
200ml double cream
50g meringues, roughly crushed
We have eaten an Eton Mess before, in the British trifle form and that was really delicous! Now it's summer and we've found a recipe for Eton Mess Ice Cream. Ice cream is a summer favorite here, as it is throughout the Netherlands. Ice cream with strawberries and meringues, even better, we love strawberries and meringues too!
How to make Eton Mess Ice Cream
Wash the strawberries.
Hull the strawberries.
Sliche the strawberries thinly.
Toss with lemon juice and sugar.
Place the strawberry mixture in the refrigerator to let the flavours blend
Klop vla en slagroom door elkaar en giet in een diepvriesdoos.
Close the freezer box and put it in the freezer for 1-2 hours.
Take the ice cream and put in the mixer to whisk it loose.
Pour the ice cream mixture back in the container and freeze it again for 1-2 hours, until it is soft ice cream
Fetch the ice cream from the freezer and stir it.
Spoon in the strawberries but not the stawberry syrup.
Chop the meringue finely and stir in some of the pieces.
Put the ice back in the freezer for max. 2 hours.
Fetch the ice cream from the freezer, leave it a little while and scoop it into bowls,
Pour some syrup over the Eton Mess Ice Cream, sprinkle with meringue pieces.
