Baking Fairy cakes

Shopping list
250g butter (room temperature)
250g fine sugar 
1 teaspoen vanilla extract
3 free range eggs (room temperature)
4 tablespoons milk (room temperature)
250g self-raising flour
icing and decoration
150 gram icing sugar
few drops of lemon juice
add water by a tablespoon
1 tiny drop of food coloring
sprinkles

These super British Fairy Cakes are very festive bakes. They are always made very pretty in sweet colours, with sprinkles & glitter or with fresh fruit. Perfect for a Spring tea party with the mini-monsters, on Mother's Day or pack them for a Mother's Day Picnic!

How to make Fairy Cakes

Beat the sugar and the butter until creamy.

Scrape the mixing bowl clean all around the edge.

Mix the beaten eggs into the batter.

Then add and quickly mix in the vanilla.

Finally beat the milk in the batter.

Sieve in three times 1/3 of the batter to it.

Quickly mix it in.

Preheat the oven to 175°C

Scrape the edge of the bowl.

Spoon the batter in the cases.

Slide in the middle of the oven.

Bake the cakes 15 - 20 minutes.

Allow the cakes to cool in the mold on a rack.

Wait with decorating until de cakes have cooled completely.

How to make an icing glaze

Sieve the icing sugar in a bowl.

Stir in water and lemon juice.

Add food colouring to the icing.

Stir the icing until combined.

Spoon the icing on the Fairy cakes then spread it.

Scatter the sprinkles on the wet icing and allow it to set.
