110g self raising flour
1 teaspoon baking powder
a dash of salt
2 free range organic eggs
150ml milk
1 tablespoon butter
1 tablespoon vegetable oil
half a mango, chopped
honey, to taste
At snazzie.nl we regularly use recipes from BBC chefs, we love the French recipes of Michel Roux Jr, he is a big favorite on snazzie. The French / British fusion recipes from Rachel Khoo we love as well.
But ... with the mini-monsters the recipes of the Italian chef Gino D'Acampo are the most popular. They can make a lot of his recipes almost by themselves. Pasta , pizza and sweet desserts, easy, quick and very tasty. What more could you want? We regularly think we candream up this recipe ourselves, but nevertheless we never did ;))
So here's another one! How to make Mango Pancakes
Place flour, salt and baking powder into a bowl and stir.
Make a well in the middle and break the eggs into it.
Turn on the mixer and mix it all together.
Mix the flourmixture and the eggs into a sturdy paste.
While mixing add the milk slowly to the paste.
Mix until it becomes a smooth batter without lumps.
Add the finely chopped mango to the batter.
Stir the pieces of mango into the pancake batter.
Leave the batter to rest for five minutes.
Heat the butter and oil in a frying pan.
Spoon a ladle full of batter into the frying pan.
Bake the pancakes golden brown on both sides.
Drizzle the pancakes with honey and some mango.
These pancakes taste so good, even our 1 year old mini-monster can't get enough of them!
