150g plain flour
1 teaspoon baking powder
2 tablespoons sugar
pinch of salt
4 large free range eggs
600ml milk
25g butter
powdered sugar to dust
This Finnish pancake is more like a pudding than a pancake, fluffy and sweet, an absolute favorite of the mini-monsters! The recipe is from the Hairy Bikers. Yesterday we made the fruit compote to go with it, today we bake the Finnish pancake.
How to make a Finnish pancake
Stir flour, baking powder, salt and sugar together.
Make a well in the flour and break the eggs into it.
Mix in all the flour until you have a thick batter.
While mixing, pour in the milk gradually.
Whisk the batter until light and airy.
Whisk until all milk is incorporated.
Cover the bowl, let the batter rest for 30 min.
Preheat the oven to Fan 180°C / Gas 200°C
Melt the butter in a pan.
Brush it into the baking dish.
Pour in the batter.
Place the oven dish in the oven.
Bake the pancake in 30 minutes risen and golden brown.
Sprinkle the pancake with powdered sugar, serve with fruit compôte.
For variation you can serve the pancake with crème fraïche, jam, syrup or honey.
