250 gram flour
150g white caster sugar
125g butter (cold)
1 free-range egg
a pinch of salt
2 peaches
5 opal plums
2 apples
125g blueberries
1 tablespoon caster sugar
1 teaspoon cinnamon
De pies in France are beyond compare, the fruit is so fragrant and tasty and the French pastry chefs are superb. Nevertheless we're going to bake this cake with Dutch fruits in a Dutch kitchen, as the enthusiastic amateurs that we are!
Tip! The better the quality of your fruit the tastier your tart will be, remeber this when you buy your fruit.
How to make a French Fruit Pie
Sift the flour in a big bowl.
Add the sugar and salt to the flour.
Add egg and butter cubes.
Knead it into a supple dough.
Preheat the oven to 200°C when you take the dough out of the fridge.
Place the dough back in the bowl and cover it with cling film.
Place the dough in the fridge and let it rest for a minimum of one hour.
Knead the dough quickly and roll it out on greaseproof paper until it's 1.5 cm thick.
We think it's handy to cut the paper en lower it - dough included - into the baking tin.
Prick holes in the dough and bake it for app. 20 minutes.
Peel and de-stone the fruit, cut it in halves, apples in eights.
Let de pie cool a minut and cover it with the fruits.
Bake the pie in +/- 20 minutes light brown and well-done.
Mix a tablespoon sugar with cinnamon and sprinkle it over the pie, using only sugar on the berries.
Because of the heat the sugar will melt by itself. Your French fruit pie is ready, pretty as a picture!
