French Palmiers

1 roll puff pastry
3 tablespoons caster sugar
2 teaspoons cinnamon

With a roll of fresh puff pastry you can quickly bake these delicious French biscuits, in your own kitchen. All you need is sugar and cinnamon powder and this we have at home already.

How to make French Palmiers

Stir sugar and cinnamon together.

Sprinkle over baking paper.

Place the pastry on the baking paper.

Sprinkle again and roll in lightly.

Fold the pastry in half.

Fold open and see the crease.

Fold the top and bottom to the crease.

Then fold in half.

Sprinkle the dough after each fold on both sides with the cinnamon sugar and place it - wrapped in baking paper - in the refrigerator for 30 minutes
 
Preheat the oven to 180°C / 160°C Fan

Cut both the ends neatly off.

Cut off strips of 1cm each.

Place the strips on their sides. slightly opened.

Press both sides of the folded Palmiers into the cinnamon sugar and place them on the tray on baking paper

Bake the biscuits in 15 minutes golden, in the middle of the oven.

Bake the Palmiers for 10 minutes, turn and bake 5 mins more.

Let the Palmiers cool on the tray, then transfer to a wire rack.

Serve the caramelized Palmiers with a cup of tea.

The mini-monsters like these French biscuits very much too, so we also make some mini-Palmiers, for their tea party ;))
 
To make the smaller Palmiers you fold the mini-biscuits once more in half and then also fold them slightly open at the top

Press into the sugar with both sides and bake a litlle shorter.

Pay close attention to your little biscuits, when golden they are done!
