Baking spray
2 tablespoons extra virgin olive oil
1 tablespoon unsalted butter
2 large yellow onions, thinly sliced
Sea salt and freshly ground black pepper
120 ml vegetable stock cube
2 tablespoons red wine vinegar
1 tin croissant dough
200 grams Gruyère or Pecorino, grated
fresh flat parsley, to serve
You have never to much small, savoury snacks for New Year's Eve. The evening is long and at midnight you are hungry for something tasty again. The mini's wake up by then but they prefer to eat the next morning. They just watch the fireworks and then quickly go back to bed.
The Gruyère cheese is a step too far for the little monsters but topped with Pecorino they also like these snacks. The Mozzarella cheese with cranberry bites too. So we bake some snacks these days! :))
How to make French Onion Soup snacks
Cut the onions into thin rings.
Melt the butter and heat the oil,
Add the onions rings to the pan.
Carameliza the onions and add pepper.
Only add salt if you use the Gruyère, the Pecorino Romano is salty enough by itself
Add the red wine vinegar.
Dissolve the stock cube in hot water.
Add the soup to the onions.
Let the liquid evaporate softly
Roll out the croissant dough.
Press the perforation gently closed.
Spray the holes in the baking tin.
Cut squares ,out of the dough and preheat the oven to 190°C
Press the squares into the baking tin.
Fill them with the caramelized onions.
Grate the cheese of your choice
Sprinkle the cheese over the onions in the cases.
Bake the bites in 18-20 minutes golden.
Allow the bites to cool in the baking tin first.
Then transfer the French oninon soup bites to a wire rack.
Sprinkle some finely cut fresh parsley on top.
