Shopping list
250 grams green beans
pinch of sea salt
2 eggs
1 spring onion
4 tablespoons oil
sea salt & freshly ground pepper
125 grams of mini tomatoes
½ jar sweet and sour herring fillets (350g)
few sprigs of dill
We arrived in Friesland today and we eat a Hjerringsalaad with a baguette on the side (real Frisian ;)) ). But all kidding aside, it really is a very tasty salad. Not to the mini-monsters liking, is this a recipe for 2 persons.
How to make a Frisian Hjerringsalad (salad with preserved herring)
Preparation
Clean the beans and rinse them.
Cut the spring onion into rings.
Wash and cut the tomatoes and dill.
Cook the beans al dente in 10 mins.
Boil the eggs for 8 minutes.
Cut each herring fillet in two halves.
Cool the beans under the cold tap.
Cool the eggs in cold water, peel them and cut into four wedges
Stir the dressing.
Stack it all on a plate and give the dressing on the side or over the salad.
