Shopping list
375 gram flour
225g caster sugar
1 sachet vanilla sugar
225g unsalted butter (room temp.)
1 free-range egg (room temperature)
1 teaspoon baking powder
1 tablespoon cocoa
dried cranberries
dried apricots
almonds & pistachio's
white and dark chocolate

We make fruit/nut cbiscuits in three very tasty flavours from a basic vanilla dough, cranberry & white chocolate, apricot & pistache en   . Simple but delicious, the mini-monsters make them disappear like sunshine does snow!

 

How to make fruit/nut biscuits
Start by making the dough

Weigh the soft butter en the sugar.

Mix butter & sugar until it is creamy.

Add the egg and mix it in until all is well combined.

Add the vanilla sugar and mix it in again.

Stir flour, salt and baking powder together.

Sift it in small portions into the butter and mix it quickly.

Take the dough crumbs from the bowl and knead it by hand.

Divide the dough in three equal portions.

Use 1 portion to make chocolate dough

Stir 10ml water and the coaco into a paste.

Add the chocolate paste to the dough.

Knead the chocolate into the dough until it is evenly brown.

Cranberry & white chocolate cookies

Chop the cranberries and white chocolate in pieces.

Knead the chocolate and nuts into the vanilla dough.

Make a cylinder from dough and roll it through decorating sugar.

Wrap the cylinder of cookie dough in cling film.

Apricot & pistacio cookies

Chop the apricots and pistachio's fine.

Knead apricots and pistachios into the dough.

Shape the dough into an oblong blok.

Roll the block through the sugar and wrap the block.

Almond & chocolate chip cookies

Roast the almonds golden and let them cool.

Chop the dark chocolate and the almond in little pieces.

Knead it into the dough and shape a triangel.

Roll the block in decorating sugar and wrap it in cling film.

Place the rolls on a tray and place them in the fridge for +/- 3 hours.

Preheat the oven to 175°C.

Get the dough from the fridge and cut it into thick cookies.

Place the cookies on waxed paper on the baking tray.

Bake the cookies in the middle of the oven for app. 15 minutes.

Lift he cookies on the baking paper and let them cool. Very tasty!!!
