Really old fashioned but now über hip again is preserving fruit & vegetables. Not only does it taste great but it's beautiful to look at. Today we're going to preserve plums. Preserved they stay good for at least a year. Next week we use the preserved plums in a delicious tart, so double fun!
How to preserve plums
Rinse the plums and let them drain.
Cut them in half and remove the stones.
Do not remove the skin from the plums.
Pour 400 ml water in a pot on medium heat.
Add the sugar to the water and stir to dissolve it
If you don't feel any sugar with the spoon stop stirring.
Bring the syrup to a boil and cook it for 4 minutes.
Scoop the plums in the jars and pour syrup up to 2.5 cm from the rim.
Tighten the lids firmly and place the jars in a pot with cold water.
Bring the water to a boil and leave the jars for 20 minutes in the boiling water.
Turn of the heat and leave the jars in the pot until they are completely cooled.
