Shopping list
5 teaspoons olive oil, divided
300g brown rice
300g organic chicken breast, cubes
2 large free-range organic eggs
1 clove of garlic
1 small pak choi
100g bean sprouts
4 - 5 spring onions
soy sauce, to taste
We are making a tasty stir-fry of rice with chicken and fresh vegetables for Dad. Fries and pancakes are becoming so predictable ;)) This rice dish is tasty, healthy(er) and easy to make, perfect for tomorrow!
How to make stir-fry rice with chicken
Bring a pot of water to the boil.
Add the rice, let it boil again.
Cook the rice as indicated on the packet.
Turn off the heat, leave the rice.
Stir the rice after 10 minutes and allow it to cool
Fry the chicken in 2 teaspoons of olive oil, until light brown
Let the chicken cook through.
Fry the eggs in 1 teaspoon olive oil.
Scramble the eggs until just set.
Set aside to cool.
Let the chicken cool too.
The rice is still cooling.
Chop the vegetables finely.
Wipe out the pan with some kitchen paper and add 1 teaspoon oil
Wash and dry the vegetables well.
Fry the garlic until soft.
Fry the onion and bean sprouts too.
Until the vegetables are al dente.
Set the vegetables aside for now.
Add the last olive oil to the pan.
Stir fry the rice, vegetables, finely cut chicken with the soy sauce, add the scrambled eggs in the last minute
Spoon the stir fry into bowls when it is really hot.
Dad gets the nicest chop sticks, with Chinese letters on them ;))
