1 pineapple
150ml water
100g cane sugar
2 tablespoons brown rum
vanilla stick or vanillasugar
lime zest
optional: vanilla ice cream
This sweet caribbean dessert tastes best when you sit outside with it, in the sunshine. But ... if it rains (now!) get you griddle out and eat with your eyes closed, then it taste great too!
Firstly make the syrup
- Place water and sugar in a saucepan, bring slowly to a boil and dissolve the sugar while stirring
- Add vanilla scrapings and lime zest. Allow the mixture to simmer gently for 10-12 minutes, until syrupy
- Remove from the heat and stir in the rum
Watch the time closely or your syrup will be too hard!
Clean the pineapple and cut it in pieces.
Lace the pinapple on skewers, place on the griddle.
Grill the pinapple on both sides until golden brown.
Serve the syrup with the pineapple skewers and add a scoop of vanilla ice cream.
