500 grams of minced meat
minced meat spicemix (see ingredients below)
1 free range egg
2 spring onions
2 tablespoons soy sauce
2 tablespoons baking margarine
400 grams of brown rice
1 bag of Chinese stir-fry vegetables
1 jar of peanut butter
Peanut sauce ingredients: see below
Today we make meatballs in a peanut sauce. We make the peanut sauce ourselves, the Indonesian way. We eat them with brown rice and Chinese stir-fry vegetables.
We start with the meatballs
Stir through 50 grams of breadcrumbs: 1 teaspoon white pepper; 2 teaspoons of nutmeg; 2 tablespoons paprika powder; 1 tablespoon ginger powder; 1 tablespoon garlic powder.
Knead the mince with the spicemix, soy, 1 egg, 2 onions.
Roll it into small balls, press them flat with a fork.
Bake the small meatballs brown all over in margarine.
Add some water, allow them to simmer for 10 minutes.
The side dishes
Wash, drain then fry the vegetables.
Cook the rice as indicated on the box.
Chop the peanuts finely.
Make your own peanut sauce: 1 shallot; 2 cloves of garlic; 1 teaspoon of olive oil; 150g peanut butter; 80 ml coconut milk (or milk); 2 talespoons soy sauce; 1 tablespoon dark brown caster sugar; 1 teaspoon ginger powder (djahe); 1 teaspoon ground cumin (djintan); 1/2 teaspoon ketoembar (coriander); 2 teaspoons sambal manis; dash of lime or lemon juice; handful of unsalted peanuts, chopped. Optional: salt and/or ready-made fried onions.
Press the garlic into a pan.
Fry ½ a minute in 1 teaspoon oil.
Fry the shallot too.
Add the peanut butter.
Stir in the brown sugar.
Add all spices, sambal, soy sauce and milk.
Stir in the lemon juice.
Finally stir the chopped peanuts into the sauce.
Serve the meatballs with the peanutsauce and fryed onions.
