80g butter, unsalted
3 free-range organic eggs
80g castergranulated sugar
½ teaspoon vanilla extract
80g wheat flour
2 tablespoons cold water
you also need:
good wishes; a black edible marker; baking paper;
a muffin tin; a tablespoon, a flat shovel and a cup
We make fortune cookies for the Lunar New Year. They seem so easy to make but beware, it's not as easy as it seems! We really enjoy trying it. We're going to do our best, that's for sure! The first ones are a bit too thick, but it's getting better and better. There is enough batter to bake 10 cookies
Plus, our little monsters are such a grateful bunch, they love everything we make. Although they don't like everything we bake (and we don't really like these cookies either), the fortune cookies are super fun!
How to make fortune cookies
Write beautiful wishes for the new year.
Get the things you also need together.
Melt the butter in a saucepan and set it aside.
Separate the eggs, put the yolks in a container and freeze them.
How to make the batter
Preheat the oven to 180°C / 160°C FAN
Put egg whites and sugar in a mixer.
Beat it together until foamy.
When the mixture is foamy ...
... you sift in the flour.
Fold in the flour until fluffy.
The batter is thick and fluffy
Spread it into a 10cm circle.
Bake the biscuits for 5-6 minutes.
Spreading the batter into a circle goes easier if you use a wet spoon and the thinner the cookies, the better! Work fast!
The edges should just start browning.
Turn the hot cookies upside down.
Place the wish on half of the cookie.
Fold the cookies twice in half then place them in the tin.
Allow the fortune cookies to cool in the tin and then place them in a bowl
