Shopping list
1 ripe avocado
1 tablespoon crème fraîche
1 lemon
70g radishes
sprigs of chives
1 tablespoon cider vinegar
12-16 slices toasted rye bread
200g smoked salmon, from sustainable source
1 handful baby leaves
This year we have been planning a fun brunch for today (it's Mother's Day!), with smoked salmon on toast as one of the tasty, small dishes. We hope that the event ;)) can take place outside in the garden, but that depends on the weather as usual. It looks a little unstable but inside or outside, it will surely be fun for Mum!
How to make smoked salmon on toast
Cut the bread into thin slices.
Toast the bread light brown.
Wash the vegetables, let drain well.
Slice the vegetables finely.
Spoon the avocado in a bowl.
Add some freshly ground pepper, sea salt and a squeeze of lemon juice to the avocado, to taste
Mash with the crème fraîche.
Spoon the avocado on the toast.
Dress the toast generously with salmon,
Toss the lettuce and radish with the vinegar and salt.
Divide it on top of the salmon, put a lemon wedge on the side.
