240g whole milk ricotta
180g patent flour
3 large free range organic eggs
2 tablespoons caster sugar
1 teaspoon kosher salt
½ teaspoon baking powder
baking spray or butter
icing sugar, to serve
This morning the first full day of Hanukkah starts and we bake delicious cheese latkes for breakfast. Cheese latkes are small, sweet pancakes with ricotta cheese that the monsters really like. Spread the pancakes a bit with a damp spoon, because when too thick they will not cook properly.
This is how you make Cheese Latkes
Place all ingredients (except the cooking spray) in a large bowl.
Mix it all until well combined and scrape along the edge.
Mix the batter in +/- 5 minutes thick and smooth.
Grease the skillet and preheat it on medium heat.
Scoop heaps of batter into the pan using two spoons
Circle the latkes thinner with a damp spoon.
Bake in 2-3 minutes golden brown.
Preheat the oven on lowest heat.
Slide the Cheese Latkes onto a warm plate in the oven, until all the batter is used up
Sprinkle them thickly with icing sugar, which melts instantly :))
Serve the Cheese Latkes immediately, delicious and warm!
