100g soft butter or vegetable margarine
2 sachets vanilla flavoured sugar
1 teaspoon clear honey
1 free range egg
125g gluten free almond flour
125g gluten free oatmeal
50g gluten free (lactose free) chocolate
Today we bake chocolate chip cookies, gluten free and lactose free. They smell very good when they are baking in the oven, these cookies are made from oatmeal and almond flour. Fortunately, the other mini-monsters think they taste delicious too, so that is very handy :)
How to bake gluten free chocolate chip cookies
Mix butter and egg together.
Add honey and vanilla.
Mix in the almond flour.
Then mix in the oatmeal.
Mix until a consistent dough frorms.
Chop the chocolate into little pieces.
Fold them into the dough.
Preheat the oven to 175°C and place a sheet of waxed paper on a baking tray.
Roll dough balls between your hands.
Flatten them using a fork.
Bake the cookies +/- 15 minutes.
Remove the cookies from the oven when they have a nice golden brown colour.
Keep the cookies fresh in a tin.
