Shopping list
½ cucumber, peeled
2 large ripe tomatoes + ½ red onion
100g Feta cheese, cubes
50g pitted Kalamata olives
handful of mint leaves
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
½ teaspoon dried oregano
sea salt & freshly ground black pepper
Healthy, easy, quickly ready and you still put a nice light meal on the table, which is really nice on a Saturday.
How to make the Greek salad
Cut the cucumber into chunks.
Cut the tomatoes in 16 wedges.
Slice the onion very thin.
Mix the vegetables in a bowl.
Sprinkle on feta cubes.
Spread the olives on the salad.
Sprinkle on mint leaves.
Make a dressing with the remaining ingredients.
Serve the salad with the dressing and warm(ed) pita bread.
