800 ml whole milk
200 ml cooking cream
1 tablespoon butter
100g semolina
75g caster sugar

Red Currant Juice Sauce
fresh red currants
We cook an old-fashioned semolina pudding. Dripping with berry juice sauce it is a real old Dutch classic. The combination of the grainy semolina with the sweet and sour red berry sauce is and was a popular dessert among young and old. We make it like grandma did. :)
How to cook semolina pudding
Fill the pudding mould with cold water
Sit the semolina with the sugar until combined.
Combine the milk, cooking cream and butter in a pan.
Bring the milk mixture on high heat to the boil.
Stir in the semolina/sugar and dissolve the sugar.
Boil the pudding mixture until cooked, in 5 minutes.
Pour the water out of the pudding mould.
Pour the pudding into the pudding mould and let it cool.
Put the cooled pudding in the refrigerator to set.
Place a platter on the mould and turn it upside down.
Pour the berry juice saus over the semolina pudding and place red fruit on it
