250g gram flour
50g self-raising flour
1 teaspoon tika masala powder
1 teaspoon garam masala (optioneel)
1 tablespoon lemon juice
300g potatoes, cut into small pieces
300g onions, finely chopped
3 spring onions, trimmed, finely cut
6-8 spinach leaves, finely chopped
handful fresh parsley leaves
1/2 teaspoon salt
sunflower oil, for deep frying
For Diwali we make a vegetarian snack, we make vegetable pakoras. Pakoras are fried in the deep fryer, like many Indian recipes. That's also how we fry the popular Dutch bitterbal or croquette. But then with lots of fresh veg instead of beef. :))
How to make Vegetable Pakoras
Preparation
Wash and drain the vegetables.
Cut them into equal sizes.
Cut the leaf vegetables finely.
How to make the batter
Sift flour and selfrasing flour into a bowl.
Sift in the spices too.
Stir until all is combined.
Add the 1/2 tblsp. lemon juice.
Gradually add cold water.
Stir it until you have a smooth batter.
Cover the bowl and set it aside.
Let the batter rest for 30 minutes at room temperature
Heat the oil to 190°C
Add the vegetables to the batter.
Fold it all together.
Gently drop small balls into the oil.
Fry the balls for 5-6 minutes.
Let the Pakora's drain on kitchen paper.
Eat the Pakora's warm but do mind, they are hot inside!
