For the crepes
160g flour
1/4 teaspoon salt
4 small free range eggs
35.ml milk
30g melted butter + extra for baking
a tablespoon brown rum (optional)
icing sugar to taste

50g dark chocolate
100ml milk
100 ml double cream
45g frozen butter, cubed
In Hungary you'll see them everywhere the Gundel Palacsinta (crepes by Károly Gundel). They are the Hungarians favorite, these stuffed crepes with chocolate sauce. For adults there is rum in the batter and the filling, for kids you leave out the rum.
The crepes are served folded in quarters, with filling in between and chocolate sauce on top. Or the crepes are stacked with filling in between and chocolate sauce on top, served in wedges. It doesn't matter how you serve Gundel palacsinta, it's extremely tasty!
How to make Gundel Palacsinta
Beat the eggs airy and frothy in a mixer.
Sieve the flour and the salt gradually into the eggs.
Mix until the eggs and the flour are combined.
Measure the milk and melt the butter.
Add while mixing slowly the milk and the butter (optional the rum).
Whisk until the batter is airy, then cover it in cling film.
Preferably let the batter rest for an hour at room temperature, before you start baking.
How to make the walnut/raisins filling
Chop the walnuts and the raisins fine.
Add the sugar (optional the rum).
Add the lemon zest too and stir.
The filling smells delicious!
How to make the chocolate sauce
Break the chocolate into pieces and put it in a saucepan.
Add the milk and cream and let it melt together.
Add the cold butter cubes and stir them into the chocolate sauce.
How to bake the crepes
Brush the frying pan with butter.
Ladle the batter into the pan.
Let the batter run to the edge.
Turn the crepe when the rim browns.
Slide all the crepes on to the preheated platter.
Fold the crepes, fill them and fold double again.
Serve the Gunder palacsinta with the chocolate sauce.
