Hagrid's Rock Cakes (30 - 35)
220g self-raising flour
a pinch of salt
120g butter
120g fine sugar
½ of a free range egg
120g mixed dried fruit
zest of ½ orange
juice of ¼ orange
1½ tablespoon of milk
Harry potter week 2 and shortly we will start on the fifth book already, when the 7 books are read (maybe!) at the end of next week we will switch to the movies! Today we bake the rock cakes from Hagrid but with a small adjustment. The dried fruit such as apricots or cranberries in cookies or cake is not so good with the mini samples, so we stick to raisins. Together with the orange, the cakes already smell and taste super delicious!
Here is how to make Hagrid's rock cakes
Preheat the oven to 170°C and cover a baking tray in waxed paper
Sieve flour and salt in a big bowl.
Rub the butter into the flour.
Knead in the sugar.
Beat a whole egg.
Knead half of the egg into the dough.
Grate half an orange's skin.
Squeeze an orange.
Knead the orange zest and a quarter of the juice through the dough.
Knead in raisins and milk.
Put little heaps on the baking tray.
Bake the cakes for 10 - 12 minutes.
Or until golden brown.
Allow the cakes to cool on a wire rack.
