200g self-raising flour
150g caster sugar
150 g butter (room temperature)
125 ml semi-skimmed milk
3 free range eggs (room temp.)
2 tablespoons of cocoa
100g dark chocolate (72%)
200 ml whipped cream
white, black and orange fondant icing
Today we surprise the kids with Halloween cupcakes. We put Emilia Hoekand (a beloved vampire girl from the Halloween books series by Laura Ellen Anderson) on it and her squashy squashy pumpkin, success guaranteed!
How to make Amelia Fang cupcakes
Melt the chocolate au bain marie then let it cool.
Beat the butter with the sugar into a creamy and fluffy mixture.
Beat the eggs one by one into the butter mixture.
Stir cocoa into the flour and beat it in parts in the butter mixture.
Add the milk and the cooled chocolate.
Fold it in quickly until you have a smooth batter.
Scoop the batter into the paper cases.
Preheat the oven to 175°C
Place the paper molds in a cupcake tin then bake them for 15 - 20 minutes in the middle of the oven, check after 15 minutes if they are cooked!
Allow the cupcakes to cool completely.
Make a hole in the middle, fill with cream.
Cut out fondant icing circles.
Make Amelia Fang heads on the orange circles.
Make Squashy's on the the black circles.
Place the cirkels on top of the cupcakes.
