Guacamole:
1 avocado
1 lime
1 clove of garlic
sprigs of fresh coriander
freshly ground black pepper and
sea salt to taste
4 large tortillas
Mango / Tomato Salsa
tin of sweet corn 100g
tin of black beans 100g
1 spring onion, in fine rings
½ a red pepper, finely chopped
100g small Roma tomatoes, in halves
½ of a large mango, cubed
handful of black olives, in rings
sprigs of koriander, finely chopped
¼ teaspoon of smoked paprika
fresh black pepper and sea salt to taste
For Halloween we make this healthy snack to bring the kids some balance, with all the sweetness;) You quickly bake the nachos in the oven and with all vegetables, fruit and a fresh dip you can't go wrong! And very handy for a party, you can make the guacamole and the salsa a day in advance.
Start by making Guacamole
Halve the avocado.
Scrape it out.
Squeeze the lime and garlic.
Finely chop the koriander.
Season to taste with sea salt and black pepper.
Stir all together but leave it chunky.
Place the guacamole dip in the fridge until everything is ready.
How to make mango / tomato salsa
Wash, peel and cut all ingredients.
Place corn, beans, onion, pepper in a bowl.
Add tomatoes, mango and olives to it.
Season the slasa to taste with the finely chopped koriander, smoked paprika, sea salt and freshly ground black papper then place it in the fridge.
How to make the Halloween nachos
Preheat the oven to 200°C
Cut 6 bats out of one tortilla.
Place on baking paper.
Bake the bats in 5 mins. crispy.
Allow to cool well.
We cut triangles from the tortilla scraps and bake them too, always comes in handy a little extra ;) (The chocolates are bought at HEMA)
