250g flour + extra to dust
150g caster sugar
150g butter cubes
1 free range egg
pinch of salt
1 sachet vanilla sugar
All the mini-monsters love homemade biscuits and Halloween is on it's way. But the one would rather not have a glaze on them, too sweet. The other does not like chocolate, the next one finds fondant icing gross(?) OK! Today we bake cute pumpkin cookies. Vanilla because - hurray! - everyone loves those!
How to make pumpkin cookies
Mix the butter cubes with the sugar creamy.
Weigh the flour, add salt and vanilla sugar to it.
Sieve the flour mixture into the butter mix.
Add the egg yolk then mix it into the dough.
Knead the dough quickly smooth by hand. Wrap it in cling film then place it into the fridge for at least 30 minutes.
Allow the dough to acclimatize a sec.
Roll the dough to 0.5 - 1 cm thickness.
Cut out circles with a small glass.
Preheat the oven to 175 ° C
Press a cute face in the pumpkins.
Place the biscuits on a tray lined with wax paper.
Bake them in 12-15 minutes golden.
Allow the biscuits to cool completely on a wire rack.
