30g butter
50g caster sugar
50g light brown demerara sugar
1 free range egg
1 teaspoon vanilla essence
65g rolled oats
100g plain flour
1 teaspoon baking powder
Oatmeal cookies are the simplest cookies you can make, which btw taste best when you eat them just from the oven. We also make some mini's, for the kids doll's tea, while we are at it ;)
How to make oatmeal cookies
Mix butter and two sugars creamy.
Mix in the egg and the vanilla.
Add oatmeal, flour, salt and baking powder.
Preheat the oven to 190°C
Mix until combined into a sticky dough.
Roll into balls between your hands.
Place the balls slightly apart.
Bake the cookies in approximately 12 minutes light brown, then allow them to cool slightly on a wire rack.
