Shopping list
125g caster sugar
125g butter (room temperature)
1.5 free range organic egg (room temperature)
½ teaspoon vanilla extract
1250g self-raising flour
2 tablespoons milk (room temperature)
For the whipped cream
250ml whipping cream
2 tablespoons caster sugar
½ sachet klopfix

Today is the start of the carnival in the Netherlands so we bake festive cupcakes. Simple but very tasty vanilla cupcakes with whipped cream on top, the favorite cupcakes of the mini monsters. When they see the cupcakes it is already a party because we have put beautiful masks made of sugar on top. The little cakes  immediately look festive!

How to make these carnival cupcakes

Beat butter and sugar until creamy.

Beat in the egg.

Add and mix in vanilla.

Sift in the flower.

Fold the flour into the butter mixture.

Finally fold in the milk.

Place paper cases in the baking tin.

Preheat the oven to 175°C

Spoon the batter into the paper cases.

Bake the cakes for 25 minutes.

Beat the cream until stiff.

Spoon the cream into a piping bag.

Pipe rosettes of whipped cream on top of the cupcakes.

Decorate the cupcakes with masks, for example.

Now the party can begin! Alaaf! (Dutch Carnival greeting)
