125g soft butter
125g caster sugar
1 free-range organic egg (small)
1 teaspoon vanilla extract
250g Zeeland flour
½ teaspoon baking powder
yellow fondant icing
a piece red, green, blue fondant icing

For Epiphany we bake the crowns of The Three Kings. We make them beautiful with 'gemstones', which also taste deliciously like chocolate. That will be a fun surprise with afternoon tea, for our little monsters!
How to make the Crown biscuits
Mix butter and sugar until creamy.
Beat in the egg.
Add the vanilla and beat in.
Sift in the flour gradually.
Add 1/3 of the flour and fold it in by hand, repeat this 2 times until all the four is incorporated
Shape the dough into a flat ball.
Wrap the dough in cling film.
Let it rest in the fridge for 1 hour.
Knead the dough briefly.
Roll it to 1cm thickness.
Cut out the crowns.
Place waxed paper on the baking tray.
Cover the baking tray with the crowns and place in the fridge for 30 minutes
Preheat the oven to 175°C
Bake the biscuits for 12-15 minutes.
Allow the crowns to cool on a wire rack.
Stick yellow crowns out of fondant icing.
Stick the crowns on the biscuits with a drop of water.
Stick the gemstones on the crowns and let the icing dry a minute.
Serve the biscuits with a nice cup of tea!
