225g soft butter
225g caster sugar
1 free range organic egg (room temperature)
1½ teaspoonl vanilla extract
375g plain flour
1 teaspoon baking powder
Depending on the size of the biscuits is
this amount enough for the whole class.
Mix butter and sugar fluffy.
The mixture should be light and pale.
Mix in the egg and then the vanilla.
Mix until fluffy again.
Put flour and baking powder in a big bowl.
Stir until combined.
Sift it then mix it briefly into the dough.
Take the dough out of the mixer.
Knead it quickly smooth.
Wrap it in cling film.
Place the dough 1 hour in the fridge.
The dough can also safely stay overnight in the refrigerator
Preheat the oven to 175°C
Roll the dough to 1 cm thickness.
Cut the shapes out of the dough.
Place them on a tray covered with waxed paper.
Bake the biscuits in 8 - 12 minutes golden brown.
First cool the biscuits on the baking tray, then on a rack.
A nice advantage is also that you can make whatever you like from these biscuits. Today we bake funny turtles, tomorrow it may be cool rockets or Fairy Tale Cinderella slippers, ferocious dinosaurs or cute mushrooms, pretty Chinese lanterns or silly Chameleons. It is lovely to be able to still pleasantly surprise the mini-monsters, every time!
