What do you need?
Dark chocolate (preferably 72%)
Milk chocolate (from a good brand)
White chocolate (from a good brand)
Double cream
a heat-resistant bowl
saucepan with water
How to melt dark chocolate au bain marie
Confectioners say that chocolate melts better when you chop than when you break, so we chop;) Always use a heat proff bowl or plate.
We often melt with 1 or 2 tablespoons of double cream added, to loosen the chocolate.
Stirring is always done briefly and no more than necessary, often we turn the bowl up, down and around. Allow it calmly to cool a bit then again quickly process it!
Bring a layer water to the boil, it may not touch the water.
Chop the chocolate in more or less even pieces.
Put it in the bowl and add the un-whipped double cream.
When it is almost completely melted you stir briefly.
Melting milk chocolate au bain marie
For milk chocolate to melt, we buy Belgian chocolate drops by Callebaut and Tony's Chocolonely milk chocolate bars.
It depends on what we are going to make and whether we need much or just a little chocolate. Both types go well, as long as you pay attention!
Put the chocolate in a bowl, put it on boiling water.
Add the cream then wait until the chocolate has nearly melted.
Stir it briefly, allow to cool a little then use it.
How to melt white chocolate au bain marie
Melting white chocolate is a bit more difficult than dark or milk because it burns faster.
The reason we melt all chocolate au bain marie and not in the microwave is because thet way you have more control over it.
Do not leave it and take the pan with the bowl of chocolate off the heat before it is completely melted. Swirv the bowl or stir quickly!
Chop the white chocolate into small pieces.
Make sure the pan is placed on low heat.
Stir quickly when the chocolate is alsmost completly melted.
Now you can pour chocolates with it, or make popcorn.
Our pour the chocolate on a cake or make a tartlet.
Make chocolate frogs with it, biscuits or lolli pops.
