600g of lean ground beef
1 small red onion, finely chopped
2 cloves of garlic, pressed
2 tablespoons of Worcestershire sauce
2 tablespoons of parsley, finely chopped
sea salt and freshly ground pepper
2 tablespoons of sunflower oil or butter
75 grams of cheddar
75 grams of stilton
4 baking rolls
50g mayonnaise - 50g mustard
to serve: lettuce and tomatoes

As promised yesterday, we make beef burgers today, based on a British recipe. Our delicious homemade tomato ketchup will taste good with it. To make the burgers we like to use a burger press, it is so easy! You tap with the mould and the exactly even burgers just fall into your hand.
The British make simple sauces, their burger sauce is often half ketchup, half French mustard and sometimes half mayonnaise and half French mustard. We do not want to spoil our homemade ketchup by adding so much mustard, so we go for the mustard - mayonnaise ;))
How to make the British beefburgers
Fry onion and garlic softly until translucent, allow to cool.
Put the minced beef in a big bowl, add the onion and garlic.
Knead it with Worcestershire sauce, parsley, salt and pepper.
Divide the beef in four and put it in a hamburger press.
Press hard with the top part of the press.
Tap out the burgers, on your hand.
Brush the burgers with butter or oil.
Fry the burgers until brown with nice dark stripes in a hot skillet, about 7 minutes on each side.
Cover the top with the cheese, allow it to melt.
Place lettuce in the buns, top with the beefburger and tomato.
Stir the mustard mayonnaise, fetch the tomato ketchup and serve both on the side. Enjoy!
