5 free range organic egg yolks
80g caster sugar
30g cornflour
1 vanilla pod
900 ml whole milk
100 ml double cream
optional
250 ml double cream
2 tablespoons caster sugar
Today we cook our own vanilla pudding and everybody here likes it very much. We do not use a packet or bag, that is not making it yourself, we make it from scratch.With Gran's recipe at hand it almost just as easy!
How to make a real vanilla pudding
Fill the pudding mold with cold water until the pudding is ready..
Beat the egg yolks with the sugar and corn flour.
Set the bowl aside for now.
Scrape the seed out of the vanilla pod.
Pour 800 ml milk into a pan and add the seed and vanilla pod to it.
Bring the mixture to the boil (not boiling!) keep stirring and remove the vanilla pod.
Add the 100 ml of cpld milk to the egg yolk mixture, stir until combined.
Pour half the hot milk into the egg mixture and stir to combine.
Put everything back in the pan and bring to the boil while stirring.
Keep stirring and let the pudding thicken in 1-2 minutes.
Emprty the mold and pour in the pudding.
Place a flat plate on top of the pudding mold.
Flip plate and mold together upside down.
And there's your pudding!
Pipe rosettes of whipped cream around the vanilla pudding.
