Shopping list
4 thin slices of beef
4 slices Parma ham
50g green olives
50g Pecorino, shaved
sea salt and freshly ground pepper
2 tablespoons olive oil
1 clove garlic and 1 onion
2 tablespoons tomato paste
100ml dry red wine
125ml beef stock
1 sprig of sage
These beef rolls in a red wine sauce are stuffed with cheese and olives, as made in Bari. We like them very much.
How to make Involtini alla Barese
Roll the beef flat.
Season with salt & pepper.
Chop the olives fine.
Spread ham on the beef.
Place olives and cheese on top.
Roll up the beef.
Tie the rolls with kichten string.
Chop onion and garlic fine.
Heat the olive oil.
Fry onion and garlic until soft.
Fry the rolls brown all around.
When the beef has nicely browned add the tomato paste.
Add the beef stock too then bring to a boil.
Quench(?) with red wine, add the sage.
Let the rolls simmer +/- 30 minutes.
The beef will be cooked and the sauce reduced.
Serve the rolls on hot plates and spoon on saus.
Delicious with a green salad and baked potatoes on the side, Buon appetito!
