Shopping list
vegetables (carrot, leek, beans, cauliflower, parsley)
1 garlic clove
1 onion
tin cannelinni beans (400g)
400g cherry tomatoes
1l vegetable stock
2 tablespoons tomato puree
whole wheat pasta to taste
grounded white pepper
1 tablespoon olive oil
This delicious light soup is very suitable for children, that's why we add whole-wheat animal shaped pasta. The kids can help make this soup, with a plastic knife they can cut all the vegetables.
How to make minestrone for kids
Fry the onion and garlic soft in the olive oil.
Chop the vegetables in bite size chunks.
Wash and drain the vegetables in a colander.
Shortly fry the vegetables then stir in the tomato Pureé.
Add the tomatoes and the vegetable stock.
Rinse the cannelinni and add them to the soup.
For the kids we add the animal shaped pasta.
After 10 minutes on a low heat the soup is ready to be served, tomorrow we bake baguettes.
