A simple Minestrone

for kids who do not like vegetables
Lunch, Italian, With fresh vegetables, Pasta, Beef, and Soups
Minestrone side

Shopping list
20 ml of olive oil
two large carrots
3 stalks of elery and 3 shallots
half a thinly sliced cabbage
a clove garlic, crushed
400g tin cubed tomatoes
400g tin cannellini beans
small tin of tomato puree
100 grams of spaghetti
1.5 liter vbeef stock (cube)
Salt & pepper to taste

For our mini-monsters who do not like vegetables we make today Minestone, a delicious fresh vegetable soup by an Italian recipe. Tasty with a beef bouillon and lots of fresh veg (which we cook very soft) and pasta. Then the veg is hidden in the soup between the pasta. Optional you can pulse the veg in the blender, for very picky eaters.


Make your own beef bouillon by simmering a soup bone with 300g cubed beef, use a beef stock or cube.

 

How to make fresh Minestrone

Wash and cut all vegetables finely.

Rinse the beans until the foam has gone.

Fry the shallots with the garlic soft.

Add carrot, celery and tomato puree and let it simmer.

Add  tomatoes and their juice to the very soft vegetables.

Stir all ingredients together and let it warm through.

Make 1.5 leter beef stock using the cube.

Add the stock.

Stir the soup while heating.

Add the beans and the spaghetti.

Finaly stir the thinly cut cabbage into the soup.

When the spaghetti is cooked the soup is ready.

Sometimes the bean stay on the bottom of the bowl but we can't win em all ;) The soup is even tastier with some Italian bread on the side, like focaccia or ciabatta.
