Shopping list
120ml extra virgin olive oil
3 tablespoons white wine vinegar
sea salt & freshly ground black pepper
½ shallot, chopped finely
small clove of garlic, chopped finely
½ teaspoon of Dijon mustard
1 heaped tablespoon of fresh herbs
(basil, chives, parsley), minced
1 bag of mixed salad with arugula
½ shallot, chopped finely
½ a (Cantaloupe) melon
100g of Prosciutto di Parma, sliced
For Mum we make an Italian salad today, a try out for Mother's Day ;)) This delicious Prosciutto di Parma spring salad with cantaloupe can be eaten as a starter or for lunch, both will be a success! Even the mini-monsters look forward to the salad, they love melon!
How to make a Prosciutto di Parma salad
First make the dressing
Measure oil, mustard, vinegar, then stir with salt & pepper.
Add onion, garlic and fresh herbs, stir until combined.
Place the salad in a bowl, add the second half of the shallot.
Put the salad and the dressing for now to the side.
Remove the seeds then peel the melon.
Slice the half melon into thin wedges.
Put salad on a plate, trickle dressing over it.
Place some melon on top then some more salad.
Place Prosciutto on top, serve with the remaining dressing on the side.
