2 free-range organic eggs
300ml whole milk
250g self-raising flour
2 teaspoons baking powder
25g caster sugar
50g unsalted butter, melted
extra butter, for frying
75g strawberry jam
icing sugar, to serve
This weekend we bake extra delicious pancakes, but if you bake them too, do not mind the calories, which are shocking :))) The Jam Doughnut pancakes are deliciously sweet, filled with strawberry jam and sprinkled with icing sugar. These festive pancakes are perfect for this festive day!
How to make Jam Douhgnut Pancakes
The preparations
Pour the milk and the egg in a jug.
Beat it until well combined.
Stir flour, baking powder and salt together.
Melt the butter on low heat.
How to make the batter
Pour the milk mixture into the flour mixture while stirring.
Beat the batter vigorously with the whisk until you no longer see any lumps.
Stir the caster sugar into the batter until well combined.
Finally, add the slightly cooled butter to the batter.
Beat the butter into the batter, until fully incorporated.
Cover the bowl and put it aside for 30 minutes.
Let the batter rest for 30 minutes, but if you do not have the time bake right away
How to bake Jam Doughnut Pancakes
Wait until the pan is hot and the butter is frothy.
Fry the pancakes on medium heat and ladle in the batter.
Fry the pancake for 30 seconds and spoon 2 teaspoons jam on top.
Spread the jam over the pancake, using the teaspoons.
Cover the jam with a ladle of batter.
Gently flip the pancake.
Bake the pancake until golden, in 1-2 inutes
Keep on baking until the batter is completely used up and meanwhile keep the pancakes warm, in the oven
Sift icing sugar over the pancakes.
Serve the Jam Foughnut Pancakes nice and warm!
