4 white bread slices
50g soft butter + extra
3 tablespoons blackberry jam
2 large free-range organic eggs
50ml milk
25g caster sugar
½ teaspoon vanilla extract
optional
demarara sugar
whipped cream, to serve
With the fresh blackberry jam we made yesterday, we now make extra tasty sandwiches! In England this breakfast is called Jam & Eggy Bread. We think it would be called toast with jam here in the Netherlands. :)) But that's what we think, we're not sure.
How to make Jam & Eggy Bread
Spread butter and thickly jam over the bread.
Top with the 2 remaining slices of bread.
Whisk in a bowl the eggs, sugar and vanilla extract together.
Add the milk to the mixture and stir until combined.
Briefly beat it until foamy.
Place the sandwich in the bowl for 8 - 10 seconds.
Heat the pan with 2 teaspoons butter.
How to bake the Jam & Eggy Bread
Turn the bread for 8-10 seconds.
Bake the bread in the hot butter until golden.
Turn the bread and fry the other side the same way.
Sprinkle demarara sugar on a tray with waxed paper.
Press the sandwich in the sugar, with both sides.
Cut the Jam & Eggy Bread in half diagonally.
Serve the Jam & Eggy Bread immediately, with whipped cream on the side, if you like
