4 large ripe tomatoes
2 red onions
1 red bell pepper
1 yellow bell pepper
6 free range chicken thighs
4 cloves of garlic
½ bunch of fresh thyme
2 tablespoons olive oil
2 tablespoons balsamic vinegar
sea salt & black pepper to taste
For the weekend we make one of Jamie Oliver's easy recipes, his hit & run chicken tray bake is a real lazy Sunday recipe. With a crusty loaf and a green salad you put - easy peasy - a delicious meal on the table.
How to make Jamie's 'Chicken Traybake'
Preheat the oven to 180°C
Chop the tomatoes, onions and peppers in wedges.
Place the vegetables and chicken in a roomy baking dish.
Crush the garlic unpeeled and scatter it over the baking dish.
Sprinkle on picked thyme leaves and paprika powder.
Add oil, vinegar and sea salt & pepper to taste to the traybake, coat the chicken and veg with the oil and vinegar. Make sure the chicken does not disappears under the vegetables.
Bast the chicken now and then with the juices then turn it over.
Roast the chicken in +/- 1 hour golden and cooked.
