Shopping list for two
2 cloves of garlic
2 red onions
handful of basil
olive oil
1 tin of tomatoes (400g)
300g of free range chicken breast
50g plain flour
1 large free range egg
50g of bread crumbs
50g Parmesan cheese
150g linguini
optional a red & green salad
Jamie Oliver's recipes are easy to do for everyone, for cooking with children too. Simple, quickly finished and the mini-monsters like Jamie's pastas a lot. Especially this one, with crispy chicken!
How to make Milanese chicken with linguini
First you make the tomato sauce and at the same time bring a large pot of water with a pinch of salt tot the boil, for the pasta
Cut the onions, peel the garlic.
Bake onions and garlic soft.
Add the fresh herbs.
Add the tomatoes too.
Season the sauce with sea salt and freshly grated black pepper
Fill the tin with water then add it.
Reduce the sauce in 30 minutes.
Cook the linguini al dente.
How to make Jamie's crispy chicken
Jamie places the chicken breasts between double sheets of cling film then he bashes them flat with a heavy saucepan :) We roll the chicken firmly flat with the rolling pin (hitting it is aloud too) between baking paper.
Roll on paper or cling film.
Flatten to 5 mm thickness.
Grate the cheese.
Whisk the egg in a soup plate.
Fill another plate with flour and one more, with bread crumbs tossed with 30 grams grated Parmesan
Cover the chicken in flour.
Coat it in egg.
Press it in cheese/bread crumbs.
Heat a lug of olive oil.
Fry them 4 mins. on each side.
Chicken must be cooked through.
Drain the pasta.
Loosen the sauce with cooking water if needed, stir in the linguini.
Serve the linguini along side the crispy chicken.
Sprinkle on the remaining Parmesan and some basil leaves. Enjoy!
