2 packets of tea biscuits
500 gram cottage cheese
150ml double cream
2-3 tablespoons sugar
150g milk chocolate
200ml milk
125g red currants, of wich 25g to decorate
We are in Estonia and it is very beautiful! But we do not have time, we are hunting for pastries of course! We found a cake which is very populair in Estonia, super tasty and really easy to make, the šokolaadi küpsisetort.
The milk to soak the biscuits in is often replaced by strong coffee with optional liqueur, especially in the chocolate version of the cake. In the non-chocolate ones nowadays all sorts of fruit are used in or on the cake, the red or light green currants are classic.
How to make Sokolaadi Küpsisetort
We used cheap but tasty tea biscuits as the cake base.
Pour the milk into a bowl and soak the biscuits briefly.
Pour the cream into the mixer and add the sugar.
Beat the cream stiff then add the cottage cheese to it.
Beat the cottage cheese and the stiffened cream until combined.
Place the biscuits in a mold and spread the cream on.
Cover the cream mixture with another layer of soaked biscuits.
Wash the red currants and let them dry on kitchen paper.
Spread cream again on layer two but sprinkle it with red currants too.
Melt the chocolate au bain marie and stir in a tablespoon milk.
Spread a thick layer of chocolate on to the last layer of biscuits.
Let the top layer harden in the fridge for a couple of hours.
Place the remaining currants on the cake and serve with coffee.
