Scones with clotted crean and jam are a nice sweet treat to go with a British tea but ... the savoury variety with a ripe old type of cheese in it will usually be served with a glass of ruby port. But if you prefer tea then that's possible too ;)
How to make British Cheese Scones
Put flour, salt and butter pieces in a bowl.
Rub butter and flour between your fingertips.
Until the flour resembles coarse crumbs.
Grate the cheese.
Stir the cheese into the crumbs.
Add the milk to the mixture.
Stir the mixture until combined.
Preheat the oven to 220°C
Knead the dough quickly by hand.
Roll the dough to 2 cm thickness.
Cut out scones then brush with milk.
Bake the scones in 12 to 15 minutes golden brown.
Serve the cheese scones with a glass of ruby port.
