150g self-raising flour
dash of salt
150g soft butter
2 tablespoons stroop (or maple syrup)
4 tablespoons soft brown sugar
1 teaspoon cinnamon
3 free range eggs
optional: 1 tablespoon extra syrup
These delicious muffins are easy to make and quickly ready. Perfect for a late Sunday morning breakfast or with your afternoon cup of tea.
How to make Cinnamon Muffins
Preheat the oven to 160°C
Mix butter, sugar, syrup and cinnamon until combined.
Add the eggs and mix until combined.
Stir salt into the flour, add it in parts.
Fold the flour into the butter mixture until combined.
Scraping the sides of the bowl regularly clean.
We use a small ice scoop to fill the muffin cases evenly.
Bake the muffins +/- 20 minutes, in the middle of the oven.
Allow the muffins to cool in the baking mold.
Drizzle a little syrup on top of the muffins, if you like.
